We ( My husband and I) were looking for a good Bombay style schezwan sauce ( the one with chicken lollypop)but couldnt find one, but during out try out sauces  we had so much of the “not-the-one-we-are-looking-for” sauce I didnt know what to do with it, so I decided try something with it so to get rid of it.. but it turned out to be a very tasty dish itself, so here is how I got it..

Ingredients:

Sauce:

1. 10 Red chillies ( use lesser if you cant handle spice/Hot)

2. 7 bulbs of garlic

3. 2 green chillies / jalopenoes

4. 1tbsp of grated ginger (approx)

5. 1 stalk celery

6. 2 white onions (red also will do, red is more flavorful, has a strong taste)

7. 2 tsp cornflour/corn starch

8. 1 tbsp vinegar

9. 1 tbsp sugar

10. 1 tsp chilli garlic sauce (Tuong ot toi, Vietnam)

11. 1 tsp tomato ketchup (optional to reduce the hot flavor )

Noodles:

1. Any noodles made of  flour( ready to make like maggie or any asian flour noodles)

2. Oil to deep fry

Directions:

To make the sauce,

Boil the red chillies and 3 pods of garlic in 2 cups of water. After the chillies are soft drain the water and keep the water to use later.

Grind the boiled and drained chillies and garlic to a paste.

Add 1tbsp of oil in a flat bottom pan, add finely chopped onions, ginger and rest of the garlic.

Add finely chopped green chillies and celery. Let it fry until the onion turn translucent.

Now add the Chilly-garlic paste that you blended earlier.

Add the water that was drained. Add some Chilli-garlic sauce from the bottle(optional).

Add the ketchup, Vinegar , salt and sugar. Let it boil for about a minute.

Now mix corn flour/corn starch in 2 tbsp of hot water.

Slowly while stirring the sauce in the pan add the corn flour mixed water ( this thickens the sauce)

So now the sauce is done, add more sugar if you think it is really spicy.

Noodles:

Boil the noodles (plain) in water, after it is cooked drain out the water completely.

Heat the oil and fry the noodles ( to be creative, if you have a metal sieve put the noodles in it and fry so it takes that shape.)

Fry till it is golden brown.

Now mix the noodles and the sauce and enjoy.
