Ingredients:

  1. 6 Eggs
  2. 3 Medium sized yellow / red onions
  3. 1/2 Roma tomatoes
  4. 8 to 9 Red chillies
  5. Turmeric powder
  6. Tamarind paste
  7. Salt
  8. Curry leaves for garnishing

Directions:

1. Boil the eggs and slice it to halves or quarters as per choice
2. Grind chillies, turmeric powder, tamarind paste and salt to paste
3. Add 1 tbsp of oil and saute in to a pan
4. Saute the onions till its brown
5. Add the ground paste in to the pan
6. Squeeze the tomato juice into the pan
7. Cook till the oil is separated
7. Add the egg pieces just before turning off
8. Garnish with fried curry leaves (Fry with a little oil)
