Thanks to my dear friend Vidya and her Mom for this wonderful recipe, one of my favorites.

Cooking Time: 10 mins

Serving: 3

Ingredients:

  1. Spinach
  2. Cilantro
  3. 1 tsp Cumin Seeds
  4. 1/2 tsp Red Chilly powder/ Cayenne pepper
  5. 1/4 Chopped Shallot (white onion)
  6. 1-2 Chopped Garlic Pods

Directions:

  1. Add 1/2 tbsp oil
  2. Add chopped garlic fry until almost golden brown
  3. Add Shallots
  4. After the shallots are cooked add Cumin seeds
  5. Add the Spinach, turn off and cool after the spinach is wilted (cooked)
  6. Whisk the yogurt in a bowl add the cooked spincah, salt and cayanne pepper
  7. Done! this goes well with Roti’s
