Summer is over already! My aunt planted a wonderful vegetable patch this summer and so I got home a ton of her home grown veggies, one of which was the butternut squash and since most of us are sweet-toothed in the house I decided to make this long forgotten (by me) dessert.

  1. 3 cups grated butternut squash
  2. 1/2 tsp Saffron
  3. 1/2 cup milk (hot)
  4. 2 tsp Ghee (Clarified butter)
  5. 2 tsp sugar
  6. Slivered almonds
  7. Golden Raisins
  8. Ground Cardamom seeds


Step 1: Add the Ghee / Clarified butter in to a heavy bottom pan, keep it on medium flame

Step 2: Add slivered almonds and raisins

Step 2: Meantime grind almonds (about 2 tsp) & cardamom seeds in a coffee grinder. Put the saffron in warm cup of milk

Step 3: After the raisins start to puff up add the grated squash, sugar, ground almonds with cardamom seeds

Step 4: Cook until the suash is almost cooked (takes about 10-15 mins)

Step 5: Add the milk and saffron

Step 6: Cook until the dish is of a medium thick consistency  and it no longer sticks to the pan
